Our little bakery is tucked away in Shaminala village, which is part of the Jagatsukh area near Manali. We run things from Lalit Kumar’s place. If you know the road up here, it can get a bit snowy and cold in the winter months, but the ovens keep the place warm. We spend a lot of time working with dough and flour. Breadfox started because we really liked the idea of having fresh baked goods right here in the valley instead of getting everything from the bigger towns. It is a lot of early mornings. The sun hasn't even come up when we start getting the first batches ready. Sometimes the flour gets everywhere, on our clothes and the floor, but that is just part of baking. We aren't trying to be some high-end pastry shop. We just make bread and other baked items for the people around Kulu and Manali. The smells coming out of the kitchen are probably the best part of the job. Most of the time, we are just busy cleaning up or packing loaves for delivery. The mountain air is good, though it makes the dough rise differently depending on the weather. We have to adjust things almost every day. It’s a lot of trial and error. People in Jagatsukh know where to find us if they need something fresh. It’s a quiet life, mostly just focused on the ovens and the next batch.
