Spice Spress

Our place, Spice Spress, is on the Indira Vihar Main Road at CP-4. This part of Kota is always full of energy because of all the students living in the hostels nearby. Most of our customers are young people looking for a quick meal that doesn't cost too much. The kitchen is small but we manage to get a lot of food out of it every evening. It can get pretty smoky in there when the burners are all going at once. I’m usually at the counter or checking on the orders. It’s not a place for a fancy dinner; it’s more for a fast bite before getting back to the books. We have a few benches outside where people can sit and eat while they chat. The menu is just written on a board and we change things depending on what is available at the market. Sometimes we have a bad day where the delivery is late or something breaks, and we just have to deal with it. I don't try to make the place look like a big chain restaurant. It’s just a local spot for spicy food. The Indira Vihar area is always changing, with new shops opening and closing, but we’ve managed to stay put at CP-4. We appreciate the regulars who keep coming back even when we are super busy and they have to wait a bit for their food.
