If you walk down Mohan Takij Road in Kota, you will find us at Shubham Gajak. It is a busy stretch of road and there is always something happening outside the door. We spend a lot of our time working with jaggery and sesame, especially when the weather starts to get a bit cooler. The shop isn't very large but it serves the purpose for what we do. We start early to make sure the gajak is fresh for whoever comes by. Most people know the name Shubham Gajak because we have been in this spot for some time. There is no corporate office or anything like that, just us and the stock we prepare every day. The counters are usually full and we try to keep things organized despite the rush. Mohan Takij Road has changed a bit over the years but our routine stays pretty much the same. We open the shutters, sweep the front, and get to work. It is a lot of manual labor, breaking things down and packing them up. We don't use any fancy talk to describe the place. It is just a shop where we make gajak and people buy it. Sometimes the road gets blocked with bikes and cars, but that is just how it is in Kota. We are glad to be a small part of this street and keep doing what we do.
