Punjab Chicken Plaza

Punjab Chicken Plaza is situated over by the Kota Junction on Mala Road. It is a very active part of town because of the railway station nearby, so there is always movement outside. We specialize in chicken dishes, and usually, you can smell the tandoor from all the way down the street. If you are walking along Mala Road in the evening, that smell of charcoal and spice is probably coming from our kitchen. The place is quite casual, so nobody needs to dress up to eat here. We have some seating inside, but a lot of our business is just people picking up food to take back home or to the station. The kitchen gets really hectic when the dinner rush starts around 8 o'clock. We have a few guys who just handle the grills and others who pack the orders. Since we are near Kota Junction, we see a lot of travelers who are hungry for a heavy meal before they get on a long train ride. We keep the menu straightforward because we want to do a few things well instead of trying to be fancy. Sometimes the noise from the trains makes it hard to hear what people are ordering, so we end up shouting at each other quite a bit. It is a tough, sweaty job, but we have been at this spot for years and we know how to handle the crowd.
