We have been running Nirmal Namkin here in Mahaveer Nagar for quite a while now. It is not some big corporate setup, just a small shop where we make snacks every day. Usually, the day starts very early for us because we have to get the oil heated up and the besan mixed before the morning crowd arrives. People in this part of Mahaveer Nagar mostly come to us for the basic things like sev, papadi, and mathri. It gets really busy in the evenings when everyone is coming back from work and wants something salty to eat with their tea. We try our best to keep everything as fresh as we can. Sometimes the shop feels a bit cramped because of all the big bags of ingredients sitting around, but that is just the way it is when you are making everything on-site. My nephew usually sits at the counter while I stay near the frying vats. The heat can get pretty bad during the summer, but we are used to it by now. We do not have any fancy signs or advertisements. Most of our customers are just neighbors who have been buying from us for years. We just focus on getting the salt and the chili right so it tastes like home. It is honest work and it keeps our family going. Sometimes we run out of things by the end of the day, which can be frustrating, but we just start fresh the next morning.
