You can find us at number 163 in the Purani Sabji Mandi area. This is where we run Krishna Papad Udhyog and make all our papads. It’s a very traditional setup inside. There is a lot of flour in the air and the sound of rolling pins hitting the boards. We have a few people who have been doing this for years. They sit on the floor and work through the dough until it’s perfectly thin. Then everything has to be dried out. If the weather is cloudy, it slows us down, which is frustrating. The old market area is always crowded and narrow, so getting our supplies in is a bit of a challenge. We don't have big machines doing the work; it’s mostly hands-on. The smell of spices like black pepper and cumin is everywhere in the building. We pack the papads into plastic bags once they are dry enough. It’s a simple product, but it takes a lot of time and patience to get it right. We don't have a glossy office or anything like that. It’s just a workshop where we work every day. People from the nearby streets come by to pick up fresh batches. We have been at this address for a long time. The walls are old and the floors are worn down from years of use. We just keep making the same things the same way.
