If you drive down State Highway No. 75 towards Lambhvel, you’ll see our place. Amar Cold Storage & Ice Plant is hard to miss because of the big trucks always pulling in. It stays very cold inside, which is a nice break from the Gujarat heat, though jumping back and forth between the freezer and the sun can be tough on the body. We make ice and keep things chilled for the farmers and traders nearby. The machinery is loud and hums all day long. We’ve had this spot for quite a while now. The floor is usually a bit wet from the melting ice, so we all wear rubber boots. We don't have a big marketing team or anything. It’s mostly just us keeping an eye on the temperature gauges and making sure the compressors are running smooth. If the power flickers, we’re all on our feet immediately to check the backup. Lambhvel is a quiet enough place until the harvest season hits, then we’re working around the clock. We drink a lot of chai to keep warm during the night shifts. It’s basic work, but it’s important for the food not to spoil. We take pride in just keeping things frozen. It’s not complicated, but it takes a lot of attention to detail to make sure nothing melts when it shouldn't.
