Johans Food Industry

Down here in Vaikom, right near the Holy Cross Church, is where we set up Johans Food Industry. It’s a busy little spot in Ayamkudi. Every morning starts early because the ovens or the stoves need to get going. You can usually smell whatever we are making from the street. We deal with a lot of raw ingredients coming in from the local markets. The bags of flour and spices take up a lot of room in the back. We have a few people from the neighborhood who help with the packing and the cleaning. It’s a lot of repetitive work, but we keep the radio on to make the time go faster. The church bells ring throughout the day, so we always know what time it is without looking at a clock. Sometimes the delivery trucks have a hard time finding the turn-off near Plot No. 3, but they usually get here eventually. We don’t have any big corporate meetings or anything like that. We just talk over coffee in the morning about what needs to get out the door by evening. The floor gets a bit messy during the rush, but we scrub it down every night before heading home. It’s just a regular food business, nothing too complicated. We focus on getting the orders right and making sure everything tastes like it should. It keeps us on our feet all day long and there is always something to clean up.
