Our bakery is located at Sudip Patikar's place in the Panga Battala area, specifically around Karjee Para in Jalpaiguri. If you know the neighborhood, you know it's a place where everyone kind of knows what's going on. We spend most of our time dealing with ovens and flour, making sure the North Bengal Bakery and Confectionery produces enough to keep things moving. It gets pretty hot in the back when everything is running at once. We started this as a simple way to get into the food business in our local area. Sudip is around most of the time, keeping an eye on the production. We aren't some massive factory with robots; it’s mostly just hands-on work with people from the nearby streets. The smell of baking bread and sweets usually fills the air by early morning, which is probably the best part of being here. Sometimes the deliveries are late because of the roads, or we run out of a certain ingredient, but we just figure it out as we go. It’s a bit messy sometimes, but that’s just how it is when you’re working with dough and sugar all day. We are just a local bunch trying to make sure the bakery stays busy and the Karjee Para location stays productive. No big secrets here, just a lot of work and a lot of trays to clean. It is tiring but we are used to the heat by now and just keep going.
