Sodani Catering Contractor has its main office at 1198, Bhagat Singh Marg in Indore Ho. This is a very busy street, and there is always a lot of noise from the passing traffic and the shops nearby. Our setup is more of a management hub where we coordinate all the different moving parts of a catering job. We have a small desk filled with calendars, receipts, and phone chargers. The phone rings a lot, usually with someone asking about a booking or a supplier calling about a delivery of potatoes. Behind the office area is where we keep the bulkier items like the gas cylinders and the oversized serving dishes. It is a bit of an old-fashioned way of working, but it has served us well. We don't spend much money on marketing or making the place look trendy. The walls are a plain color and the furniture is just there for utility. Most of our time is spent talking to the cooks and the laborers who do the actual heavy lifting. We have to be very precise with the quantities, so there is a lot of measuring and weighing going on in the background. Sometimes the monsoon rains make the street outside flood a bit, which makes loading the vans a real headache. We just put on our boots and keep going because the food has to reach its destination regardless of the weather.
