At Malwa Caterers, we’ve been working out of Johari Palace in Indore Ho for quite some time. It's a well-known spot and it keeps us busy with all the events that happen nearby. We mostly focus on the food side of things for weddings and large family dinners. Indore has a lot of traditions when it comes to meals, so we try to stick to what people know and like. We aren't a big corporate chain or anything like that, just a local team that knows how to cook for a crowd. You can usually find us prepping early in the morning when a big job is coming up. The kitchen gets hot and loud, but that’s just how it is. We’ve handled all sorts of gatherings, from small groups to really large crowds where the line for food seems to never end. We just focus on getting the flavors right and making sure the service moves along at a good pace. Sometimes things get a bit chaotic during the rush, but we’ve done this enough times to handle it. People in Indore know what they want, and we just try to provide that without a lot of fuss. It is practical work, really. We cook, we serve, and we clean up afterwards. That’s what a day looks like for us at Johari Palace. We are just happy when the plates come back empty at the end of the night because it means people enjoyed the meal.
