We run Anand Tiffins over in Saidabad on the main road. We’re right opposite the Jaihind bus stop, so it's a busy corner. Every morning starts really early for us, way before the sun comes up, so we can get the cooking done. The kitchen is always hot and smells like spices and fresh rice. We don't have a big menu, just good simple food like you'd eat at home. We pack everything up in those steel boxes and get them ready for the day. It’s a lot of chopping and stirring. Sometimes we run out of things if the crowd at the bus stop is bigger than usual. We’re not a restaurant with waiters and fancy tables, just a place that makes meals for people who are working or traveling. The floor gets a bit slippery and we’re always washing up, but it’s a good kind of busy. We’ve been here long enough that we know what people like. We don't use any fancy additives or anything, just what we buy from the market each day. It’s hard work on your feet all day, but seeing the empty tiffins come back makes it feel okay. It’s just us doing our best with the pots and pans every single day. We don't have time for fancy decorations, we just focus on making sure the lids are on tight and the food is hot.
