It’s usually pretty early when we get started here at Sai Ram Bakers. The ovens take a while to warm up, so one of us is always in by four or five in the morning to get the first batches going. Living and working around Bachupally Kukatpally means we see the same faces every day. We’ve got the usual bread, some biscuits, and the stuff people grab on their way to work. Sometimes the flour gets everywhere, and the floor needs a sweep every hour, but that’s just how a bakery goes. We don't have a big fancy team, just a few of us making sure the shelves aren't empty when the morning rush hits. It’s loud, hot near the back, and there's always a tray of something cooling on the rack. People in Rangareddy know where to find us because we’ve been at 478/A,B for a good while now. We don't do much advertising or anything like that. If the smell of fresh bread doesn't bring you in, a flyer probably won't either. The cakes take up most of the afternoon work, especially the ones people order for birthdays. It gets a bit hectic around five when everyone is heading home and wants something sweet. We just keep the lights on and keep baking until the dough runs out for the day. It is a simple living and we just keep it going.
