Down here at Sananda Apartment in Kaluray Tala Suripara, we have been setting things up for a while now. Being in Hooghly means it gets pretty humid, which changes how you look at the brewing process every day. We spend a lot of time checking the tanks and making sure the temperature is where it needs to be. It is not always easy working out of this spot in Chinsurah but we make it work with the space we have. The floors are usually a bit wet from cleaning and there is always that heavy smell of grain in the air. We aren't a big factory or anything like that. It is just a few of us here making sure the bottles get filled and the labels stay on straight. Sometimes the power goes out or a pump acts up and we have to fix it ourselves right there on the spot. Hooghly is a quiet enough place but we stay busy with the distillation equipment. We mostly just keep our heads down and do the work that needs doing. People around Suripara probably see us coming and going at odd hours because the schedule depends on the batches. It is a practical way to earn a living and we have learned a lot about how the ingredients behave in this weather. There is always something to scrub or a valve to turn.
