Sumitra Snacks Hut

We are over in Mahendratola, in the Paschim Narayanpur part of Malda. This is Sumitra Snacks Hut. We basically spend all day cooking and packing things up. The smell of oil and spices is always in the air here. It is a small place, really more of a kitchen with a counter. My wife, Sumitra, does most of the heavy work with the recipes while I handle the customers and the cleaning. We get people coming in from Janakiramtola and other nearby spots. Usually, the kids come by after school looking for something cheap to eat. We have to keep an eye on the stove constantly. In Malda, it gets very humid, so working near the heat is tough some days. We don't have a menu printed out or anything, people just ask what we made today. Sometimes we run out of things by four in the afternoon and we have to start prepping for the next morning. We use local ingredients we get from the market down the street. It’s not a fancy restaurant. It’s just a place to get a snack and move on. We have some plastic stools outside for people who want to sit for a minute. The roof leaks a tiny bit when the monsoon is heavy, so we have to move the bags of flour around. It’s just us doing what we know how to do every day.
