We are tucked away at H-35/19 in DLF Phase 1, over in the Dlf Qe area of Gurugram. It is a decent spot, though finding the exact house number can be a little bit tricky if you are not from this part of town. Brezel Bake House And Roastery Llp is where we spend almost all of our time. Most mornings, the whole place smells like coffee beans and bread being worked on in the back. We are not a big industrial factory with machines doing everything. It is more of a hands-on type of place for us. We roast the beans and handle the baking ourselves with the tools we have. It involves a lot of early mornings and staying late into the evening to clean up the flour and the coffee grounds from the floor. The equipment we use is good, but it requires a lot of looking after and maintenance. We are just a small crew of people. Sometimes we have small arguments about how long to roast a specific batch, but we usually figure it out eventually. DLF Phase 1 is a nice enough area, but it is still Gurgaon, so we deal with the usual power cuts and water issues now and then. We do not have a big corporate office with fancy chairs or computers. We just have our roasting area and the kitchen space. It is hard work and our hands are usually dirty.
