The milk arrives at IMT Manesar very early, usually while it is still dark outside. We are at Plot No 51 in Sector 5 and the whole area is usually quiet then. We have to unload the crates and get them into the cold storage before the heat starts. The floor is always wet because we wash it down so many times to keep everything clean. You can smell the fresh milk and curd as soon as you get near the entrance. It is a busy morning routine of filling bottles and weighing packets for the local people. We don't have fancy displays, just big refrigerators and some metal counters. The workers wear rubber boots because of all the water on the floor. In the afternoon, it gets a bit slower and we spend time cleaning the equipment or fixing the crates. The sun hits the front of the building quite hard in the summer. We mostly just focus on getting the dairy products out to everyone who needs them. It’s a lot of lifting and carrying heavy containers back and forth. Sometimes the power goes out and we have to worry about the temperature inside. It’s a basic job but someone has to do it every single day without fail. The local tea stalls wait for us to open so they can start their day too. We keep a close eye on the thermometer to make sure the milk stays at the right temperature even when the outside heat is unbearable.
