I run Amarpal Dairy over on Meerut Road in the Hindan Vihar area. My day starts very early, usually around four in the morning when the milk trucks arrive. We have to get everything ready before the local residents wake up and come looking for their milk for tea. It’s a lot of heavy lifting with the milk crates. We keep the place as cool as possible because the milk and curd can go bad quickly in this weather. Besides fresh milk, we make our own paneer and dahi right here. People say they like the taste because it’s fresher than the stuff you get in the plastic packets at the supermarkets. The shop is quite simple with white tiled walls and a large refrigerator that hums all day. Sometimes we get a bit of a line out the door in the evenings when people are coming home from work and want some fresh cream or butter. I’ve got some help from a couple of local boys who help with the cleaning and the heavy cans. We don’t do any advertising. People just know we are here because of the smell of fresh dairy and the fact that we’ve been here for a long time. It’s a messy job sometimes with the water and the milk spills, but it’s honest work. I’m usually pretty tired by the time we close up at night, but we do it all again the next day.
