We are over in Mahipura, at house number 34 in the Roadways Colony. It’s right near Prankur Hospital, so it’s pretty easy to find if you’re looking for us. The business was started by Jagdishlal Chawla, and we’ve been making mishri and other sugar products here for quite some time. Making sugar candy is a slow process. You have to melt it down and then let it sit so the crystals can grow. It’s a lot of waiting around for things to cool. The heat from the big vats can be a bit much, especially during the months of May and June. We don’t have a fancy showroom or anything like that. It’s a working warehouse through and through. The floors get a bit sticky no matter how much we sweep them. We sell most of what we make to the wholesalers and the small shops in the local markets. It’s not the kind of job where you wear a tie. We’re usually covered in a bit of white dust by the end of the shift. We aren't trying to change how people eat sugar, we just want to provide the basic stuff they use for their pujas or for their kitchen cupboards. It’s a steady life and we know our way around the machinery. Sometimes the machines break down and we have to fix them ourselves with whatever tools we have. We've been here long enough that most people know us.
