It’s a big residential complex, so we see a lot of the same faces every day. We aren't trying to be a five-star place. We just wanted to have a spot where people could get some decent sweets or a meal without too much fuss. The kitchen gets really hot during the lunch rush, and sometimes the orders take a bit longer than I’d like. We have a few guys out front and a couple in the back cooking. It’s a tight space, so we have to stay organized. I spend half my time checking the fridge and the other half talking to customers. We try to keep the menu simple because that’s what works for us. It’s not always perfect; sometimes a batch of laddoos isn't quite right or we run out of paneer. That’s just how it is when you’re running a small restaurant.
