Our place is located in Sector 62, up on the eighth floor of the Iosas building. It is a bit of an unusual spot for a bakery, being that high up. We use the service elevator a lot for bringing in the heavy bags of sugar and flour. The view from the window is actually pretty nice, you can see quite a bit of the area. We have been in A 802 for a while now. The kitchen gets really warm in the afternoons. We have a couple of fans going, but they mostly just move the warm air around. It is a small team here. We mostly just talk about the daily orders and what needs to be packed. Sometimes the buzzer for the floor doesn't work right, so we have to watch the door. It is not a retail shop where people just walk in off the street. We are more about the production side of things. The floor is grey cement and easy to sweep. We keep the recipes written on a whiteboard that is stained from years of use. It is a practical space. Nothing is there just for looks. We spend our hours measuring and mixing. By the time we leave, our clothes usually have white dust on them. It’s just the way it is. We try to stay organized, but things get messy when we are busy. We keep a spare set of shoes near the entrance to keep the dirt out.
