Peshawari

Peshawari is tucked into the Sector 41 C Block Market 1, which is a pretty local spot where everyone kind of knows each other. We spend our afternoons prepping the kitchen, chopping vegetables and marinating things before the dinner crowd starts to arrive. The market itself is quiet during the day, but it really picks up once the sun goes down and people finish work. You can hear the sounds of the grills going and the clinking of plates as we set the tables. We’ve got a small team here, and we just go about our business making sure the food is hot and the space is ready for families. Sector 41 isn't as flashy as some other parts of the city, but we like it that way because it feels more like a community. The C Block Market has its own vibe, with the other shops nearby and the kids playing in the open areas. We spend a lot of time cleaning the tandoors and sweeping the floors because the soot gets everywhere if you’re not careful. It’s a lot of hard work in a hot kitchen, but it feels good when the dining room is full of people talking and eating. We just keep things simple and focus on the daily tasks that keep the place running. It’s been our routine for years and we’ve gotten used to the rhythm.
