Flamboyance Kitchen

You can find Flamboyance Kitchen over at Amado Golai, right on the Byepass in Dorali. Being up here in East Gangtok means we deal with the mountain weather every single day. Sometimes the clouds are so low you can barely see across the road. Our kitchen is a busy place. It’s not like those TV shows where everything is perfect and white. It’s loud, it’s hot, and there are always dishes being moved around. We focus on getting meals ready for people who are passing through or living nearby. The Byepass is always humming with traffic. We don't have a lot of space, so we have to be smart about where we put the pots and the crates of vegetables. The staff here are mostly locals who have been cooking for years. We don't have a fancy mission statement or anything like that. We just cook. If the gas runs out or a delivery is late because of a landslide on the highway, we just figure it out. It’s practical work. We don't use big marketing terms to describe what we do. We just open the doors, prep the ingredients, and start the burners. It’s a lot of standing on your feet all day. At the end of the shift, we’re tired, but it’s a good kind of tired. We’ve been at this spot in Dorali for a bit and we’ve gotten used to the rhythm of the hills.
