Jai Balaji Fried Grams

We've been over here on Muniappan Kovil Street for quite some time now. Jai Balaji Fried Grams isn't a huge operation, just a spot in Manickampalayam where we focus on getting the fried grams right. The machines run most of the day, and it gets a bit noisy inside the shed. Erode has a lot of businesses like ours, but we just try to keep our heads down and do the work. It’s mostly about the roasting process. If you walk past the building, you can usually smell the toasted aroma. We handle the cleaning, the roasting, and the packing right here. It’s not fancy. My cousin helps out with the deliveries when the truck is available. Sometimes the power goes out, which slows things down, but we manage. We aren’t looking to take over the world or anything like that. We just want to make sure the bags going out are full and the quality is what people expect from a local place. Being near the temple means there's always activity around. We've seen the neighborhood change a bit over the years. Some days are busier than others, especially when a big order comes in from the market. We just keep the floor swept and the machinery oiled as best as we can. It's a living, and we take it one day at a time. Nothing more to it than that. I think we have about eight or nine people helping out during peak times, and we just try to stay out of trouble.
