Meenakshy Bakers Private Limited is up on the third floor of Aswathy Towers. The address is 15/82-D1 in Thekkumgopuram, near Kacherikadavu. It is quite a long way up if the lift is broken, which happens more often than we would like. We spend our days in a large room that has been converted into a commercial bakery. We have several large ovens that are almost always on. The walls are painted a light blue but they are covered in posters and notes we’ve stuck up over the years. We have a lot of large metal bowls and whisks hanging from hooks on the ceiling. It is a bit of a maze in there when we have a lot of orders to finish. We don't have a retail counter where you can buy a single loaf of bread. Most of our work is for larger orders that we send out to shops in the area. The view from the third floor is actually quite nice, looking out over the roofs of the town. We often stand by the window for a minute when we are waiting for a timer to go off. It is a hot, loud, and messy job, but we are used to it. We just keep our heads down and get the baking done. The floor gets swept at the end of every day, but by the next morning, it is covered in flour again.
