We are situated right in the middle of Dibrugarh, and if you know the area, you know it is a place where things move at their own pace. Our restaurant, Letz Go, is just a simple spot where we serve the locals and whoever happens to be passing through town. Being in the 786001 zip code means we are pretty central to everything. The weather here in Assam can be a bit unpredictable with the rain, but we stay open and keep the kitchen going regardless of the puddles outside. It is not a massive place with a lot of staff in uniforms. We are just a few people who enjoy cooking and serving food to our neighbors. The dining area has a few tables and chairs that have seen some use over the years, nothing too stylish, just functional for a quick meal. We spend a lot of time making sure the food is hot and fresh before it goes out to a customer. It is a lot of hard work and long hours, especially on the weekends when people are out. We do not really have a philosophy or a grand vision, we just show up every morning and start the day. Sometimes the market nearby gets loud and messy, but that is part of the charm of being in Dibrugarh. We have seen the town change, but we just stay here doing our thing and feeding people.
