Tunday Kababi Restaurant

The shop is right here in Mayur Vihar II, just off National Highway 24 at G-2. It gets pretty loud with the traffic outside, but inside we just focus on the food. We’ve been at this spot for a while now. Every morning starts with the same routine of getting the kitchen ready and checking the supplies that come in. The chairs aren't fancy, just some basic stuff for people to sit on while they eat. You can usually smell the spices from the street before you even see the sign. Sometimes the line gets a bit long, especially in the evenings when everyone is heading home from work. We try to keep things moving as fast as we can. The walls could probably use a fresh coat of paint, but we haven't gotten around to it yet because it stays so busy. Our staff mostly lives nearby in the neighborhood, so they know the area well. It's a tight space when the lunch rush hits, and you might have to squeeze past a delivery guy or two. We don't have a big fancy waiting area or anything like that. People just stand around and talk while they wait for their orders. It’s just how it is here. We keep the counters wiped down as much as possible, but with so many hands touching things, it's a constant job. There’s a particular way we do things that hasn't changed much over the years. We just keep the grills going and hope the power doesn't cut out during the peak hours.
