Tryst 101

We are located in Netaji Subhash Place in Pitampura. Being in an office hub means we see a lot of people in suits and shirts during the daytime. The place has a bit of a modern look, but if you look closely, you’ll see the wear and tear from all the people coming in and out. The floors get scuffed up pretty easily. We have a routine for the lunch rush because it hits all at once when the offices let out. Our staff has to be quick on their feet. In the evenings, things slow down a bit and the vibe changes. We don’t have any marketing experts telling us what to do. Most of the time, we’re just making sure the kitchen has enough gas and the fridge is working right. The tables are arranged in rows to fit as many people as we can. Sometimes the front door sticks a little when it's raining. We don't have a big mission statement on the wall. We just show up, open the doors, and start cooking. The menu is printed on some thick paper that’s starting to curl at the edges. We keep a few spare chairs in the back for when it gets really crowded. It’s a straightforward operation. We just do our work and go home at night like everyone else in the building. There’s always someone mopping or fixing a table leg before we close up for the night.
