Royal Turban

We are located over in Rajouri Garden at B K Dutt Market, specifically J 2/6A. The market is always crowded, so finding a place to park can be a real headache some days. Our spot isn't huge, but we make it work with the tables we have. Most of the guys working here have been around for a long time. They know how the stove behaves and which table wobbles if you don't put a piece of folded paper under the leg. We spend a lot of our morning just prepping ingredients and making sure the floor is scrubbed before the first person walks in. It’s not a quiet place because there’s always music or people talking loudly. The lighting is a bit bright, maybe too bright for some, but it helps us see what we’re doing in the kitchen. We see the same faces every week, mostly people who live around the block or work in the nearby shops. The menu has some smudges on it because we haven't printed new ones in a few months. Sometimes we run out of things early if it’s been a particularly busy Tuesday or Friday. That’s just the way it goes. We don't have a big corporate office or anything, just a small desk in the back piled with receipts and old notebooks. It’s a bit messy back there, but we know where everything is. We just focus on getting the food out to the tables and keeping the glasses clean.
