Qawali Restaurant

Qawali Restaurant is located at A-21 in Kailash Colony. It’s a busy neighborhood and we’ve been part of it for some time. The kitchen is where most of the action happens. It gets really hot back there with the big pots and the tandoor going. We spend most of our afternoon getting the spices ready and marinating the meat. It’s a lot of manual work, nothing fancy about it. The dining room is simple, with enough tables for families who come in mostly on the weekends. During the week, it’s a lot of office workers looking for a heavy lunch. We have a few guys who handle the deliveries around the colony, so there is a lot of shouting back and forth about orders. We keep the floors swept and the tablecloths as clean as we can. Sometimes the plumbing gives us trouble, or we have to wait for the gas cylinders to arrive, but that's just how it goes. I've been working here long enough to know how most of the dishes should look and smell without thinking about it too much. We don't really do fancy plating; we just put the food on the plate and get it out to the table. It’s a loud, busy place and that’s how we like it. We close up pretty late, usually after the last customer has had their tea and we’ve scrubbed down the kitchen counters for the next day. It is just life here at A-21.
