This restaurant is at Malcha Marg 14/48 in Chanakyapuri. It’s a bit of a quieter neighborhood compared to other parts of Delhi, which is nice for us. We have a lot of people from the embassies and local houses coming in. The space isn't huge, but we make it work. We spend a lot of time thinking about the menu and what people actually want to eat when they come out for a meal. It’s not just about one type of food; we try to have a bit of everything that we like eating ourselves. The kitchen can get a bit cramped when we’re busy, but the guys back there know how to move around each other without getting in the way. We like the light that comes into the market area during the day. It makes working here feel a bit more relaxed. We don’t have a big corporate team or anything like that, just a few of us making sure the groceries are ordered and the tables are set. Sometimes we change things around a bit just to keep it interesting for the regulars. It’s a practical kind of job. You show up, prep the ingredients, serve the customers, and make sure everything is locked up tight at the end of the shift. We’ve been here at Malcha Marg for a while now and we’ve gotten to know the pace of the street pretty well. It’s a good place to be. We just stick to our routine. Most days are fairly calm here. That works for us.
