La Tagliatella

We are based in Gandhi Nagar, right in the Jain Market at Office No 9/1225 on Pusta Road. If you know Gandhi Nagar, you know it’s one of the biggest textile markets around. It’s always crowded with trucks, rickshaws, and people carrying big bundles of cloth. Our spot is right in the middle of all that chaos. It’s a bit unusual for a place like this to be here, but we make it work. Most of our day is spent prepping dough and making sure the sauces are ready. The kitchen isn't very big, so we have to stay organized or we’d be tripping over each other. Because of where we are, we get a lot of people who work in the market coming in for a quick bite. It’s a loud environment outside, so we try to keep it a bit more relaxed inside, though it’s still pretty basic. We don’t have fancy uniforms or anything. I’m usually just in my regular clothes with an apron. The street outside can get really muddy when it rains, so we are constantly mopping the entrance. We just focus on the food and getting the orders right. It’s not a glamorous part of town, but there are always people around. We stay open until the market starts to close up. It’s hard work, especially with the heat and the noise, but it’s what we do every day. There is always a lot of cleaning to do before we leave.
