La Kababiyaa

Our place is at Ramphal Chowk in Dwarka Sector 7, specifically at Palam Extension C-390. This part of Dwarka is always moving, especially in the evenings when the market really wakes up. We have a small outdoor area and some seats inside. The kitchen is mostly open so you can see the guys working. It gets pretty hot near the tandoors. We spend a lot of time every afternoon chopping onions and marinating everything. The plastic chairs we use aren't anything special, but they do the job for a quick meal. We have a couple of ceiling fans that wobble a bit when they’re on high speed. Sometimes the menu has things crossed out because we couldn't get the right ingredients that morning from the local vendors. We don’t have a big team, just a few of us who have worked together for a long time. We know the neighbors and the people who run the other shops nearby. Sometimes we have to deal with a leaky pipe or a light bulb that keeps flickering. It’s just the usual stuff that happens when you run a small business. We don't use any fancy apps to manage things, just a big paper ledger where we write down the daily sales. The street outside is usually full of scooters and people walking their dogs. It’s a local spot, nothing more and nothing less.
