Our place is right on Parliament Street 15 in Connaught Place. Being in CP means there’s always noise outside from the traffic and the people walking around the inner circle. Inside, we just focus on the stoves. The kitchen team spends hours chopping and stirring before the first person even walks in. It’s a job that involves a lot of standing around and waiting for things to cook right. We don’t really do anything too flashy, we just put the food on the plates and take it out. Sometimes the deliveries are late because of the traffic jams around the circle, and we have to scramble to get things ready. It’s just how it is in this part of Delhi. We’ve got a mix of people working here, some younger and some who have been in the business for years. The building itself is old, so we’re always fixing a leaky tap or adjusting a door that sticks. We don’t have a big fancy story to tell. We just serve the meals and try to keep the place tidy. Most evenings we are just looking at the clock and making sure the last tables are taken care of before we close up. It’s practical work and it keeps us busy from morning until late at night. We just try to make sure everything is ready before the doors open and the dinner crowd starts arriving from the street.
