Eggspectation

Vasant Vihar is a busy place, and being at Basant Lok 54 puts us right in the middle of it. Our day starts with cracking hundreds of eggs and getting the coffee machines warmed up. It’s a morning kind of place, so the energy is high early on. We see a lot of people who are just starting their workday or families out for a weekend breakfast. The kitchen is always loud with the sound of spatulas on the grill. We don’t go for anything too polished; it’s just a hardworking restaurant. We spend a lot of time making sure the tables are wiped down and the menus aren't sticky. Sometimes the supply truck for the eggs is late and we have to scramble to find a backup, but we always make it work. The staff knows the regulars by their first names and how they like their breakfast. We’ve been at number 54 for a while now, and the building has its quirks like any old place in Basant Lok. We just deal with the leaks or the creaky floorboards as they happen. It’s not about being a big chain; it’s about this specific spot and the people who come here. We just show up, put on our aprons, and get to work making breakfast for the neighborhood every single day. That's really all there is to it.
