Chowringhee

Being in Satya Niketan, right near the South Campus, means we are basically surrounded by college students all the time. Our shop at 73/93 is small and it gets very crowded around lunchtime. We focus on the rolls because that’s what people want. We have these big tavas that are constantly sizzling. It gets really hot, especially in the summer, but we just keep flipping the parathas. We don't have a lot of seating, so most people just stand outside or take their food to go. It’s a fast environment. We have to be quick with the onions and the sauces or the line gets way too long. The students are always in a rush to get back to class. We don't do anything fancy with the packaging. We just wrap it in paper and hand it over. The street outside is usually full of bikes and people talking loudly. We’ve been here for a while and we know the rhythms of the campus. When exams are on, it’s a bit quieter, but usually, it’s just non-stop rolling and wrapping. It’s a basic job, and we’re just a bunch of guys working the grills and keeping the ingredients fresh. Most of us have been working these same stations for months now, so we have a good flow going. We usually finish the day by wiping down the counters and prepping for the next morning rush.
