Chopsticks Express

I've been working here at Chopsticks Express on Tilak Marg for a while now. Masoodpur is a busy area, especially around number 16 where we are. Usually, the morning starts with prep work, chopping vegetables and getting the sauces ready before the lunch rush kicks in. It gets pretty loud in the kitchen when all the burners are going at once. We handle a lot of takeaway orders from people living nearby or just passing through the neighborhood. Sometimes the delivery bikes are lined up outside for blocks. It's not a fancy place, just a regular spot where you can get something to eat without a fuss. We keep the floor swept and the counters wiped down, though it stays hectic. Some days are slower than others, depending on the weather or if there's a holiday. The stove is almost always hot. We mostly just focus on getting the food out fast so nobody is waiting too long on the sidewalk. I remember when we first set up, things were a bit disorganized, but we figured out a rhythm after a few months. Masoodpur has changed a lot, more shops opening up and traffic getting heavier every year. We just stay here in our little corner doing what we do. It’s mostly regular faces coming in, people we know by name who don’t even need to look at the menu anymore. We just keep the lights on and keep cooking until it’s time to close up and go home.
