Jai Ambey Flour Mill

We have been running this mill here in the Riico Industrial Area for quite a few years now. Most people know us because we are right near the new BSNL office and just opposite the Deeg Kotwali. It is a busy spot. The machines make a lot of noise all day, and there is always white flour dust on the floors and our clothes, but that is just how it is. We spend most of the morning cleaning the stones and checking the grain that comes in from the local farms. People bring their wheat or bajra and wait around while it gets ground. Sometimes the power goes out, and everyone just sits outside on the bench talking until it comes back. It isn't a fancy place. We have some old weighing scales and a few big sacks piled up in the corner. My brother and I manage the daily work, and we have a couple of helpers who stay late when the harvest season is on. It gets really hot in the summer inside the shed, but we keep the fans going. We don't do much advertising; folks just find us because we've been in Deeg so long. It’s hard work, lifting heavy bags and making sure the texture of the flour is right for rotis, but it’s what we do. We try to keep things simple and just get the job done for the neighbors and shops around here.
