Tikharam'S Bhujiawalaa is located in Kanchanbari, which is right by the Fulbarihat post office near Siliguri. If you are familiar with the Jalpaiguri region, you know this is a busy area for snacks and trade. We spend our days making bhujia and other savory things that people like to eat with their tea. The kitchen is always busy, and there’s usually a strong smell of spices and oil in the air. It’s a family-style environment here, even if we are a private limited company on paper. We don't use a lot of fancy words to describe what we do. We just fry the bhujia, bag it, and send it out to the shops. Sometimes the spice mix isn't exactly the same as the last time, but that’s what happens when you’re doing things by hand mostly. We have a few machines to help, but there’s still a lot of manual effort involved in the Kanchanbari facility. People around Siliguri know us mostly by word of mouth. We don't do much advertising; we just let the food speak for itself. It’s a hard life standing by the heat all day, but we’ve been doing it long enough that it feels normal. We just hope the packets stay crunchy and people keep coming back for more when they’re hungry for a snack. It's really about the local taste and what the customers tell us. We just try to keep the bags filled and the customers happy.
