Being in Nimbahera, specifically here in Chittorgarh, means we see a lot of the same faces every day. The shop is right there in the thick of the market. It gets pretty noisy outside with all the people and scooters going through the lane. We’ve got our kitchen in the back where most of the work happens. It’s hot and there’s always something bubbling on the stove. We don't spend much money on decorations or anything like that. The floor might have a bit of flour on it, and the counters are always busy. My family has been doing this kind of thing for a long time, so it's just what we know. We open up early and stay until the market starts to quiet down in the evening. There's no big team here, just us and a couple of helpers who have been with us for years. We handle everything from the cooking to the cleaning ourselves. It’s hard work, especially during the festival months when everyone is in a rush. We don't have a website or any of those modern things, we just stay here in Moti Bajar and keep the trays full. It's a plain, honest living and we're okay with that.
