Gandhi Road is always full of people, and our place at 90/14 is right in the thick of it. We are in Thiruvallur, which is a busy town to begin with. The smell of whatever we are making that day usually drifts out onto the sidewalk. Sometimes it is spices and other times it is something sweet. It makes people stop and look in the window. We have a small kitchen area in the back where most of the work happens. It gets very hot near the stoves. We use big metal pots and long wooden spoons to stir everything. My apron is never clean for more than ten minutes. We don't have a fancy showroom. There is just a wooden counter and a few shelves where we put the freshly packed items. We try to get everything bagged up while it is still a bit warm. Sometimes we run out of things earlier than expected because a big group comes in all at once. We just tell people to come back tomorrow. It is a small operation. My brother handles the deliveries on his old scooter while I stay behind to manage the cooking and the customers. We don't use any big machines, just our hands and the recipes we've used forever. It is a tiring job but it feels good to see the empty shelves at the end of the day. We just do our best with what we have.
