It’s a bit of a trek to get out here sometimes depending on the traffic, but we are usually here working on something or other. There’s always the smell of sugar or chocolate in the air, which I guess is better than most smells you find on the street. We started out small and we’ve mostly stayed that way because we like to keep an eye on everything ourselves. We do a lot of pastries and different kinds of chocolates, mostly just for people nearby or those who have heard of us through someone else. The kitchen isn't huge, but it works for what we need to do. Sometimes the power goes out and we have to scramble, but that’s just how it goes in this part of Delhi. We don’t have a big storefront with lights, just the workspace where the magic, if you want to call it that, happens. It’s just us, some flour, some cocoa, and a lot of long hours in Kadi Vihar trying to get things just right. Every single batch is a bit different but we try hard.
