Indali Kitchen

Our kitchen is at B-5 in Inder Puri, right across from Sehgal Tent House. It’s a busy little spot every day. We spend most of our time cooking and getting orders ready for people. It smells like spices and fried onions here almost all day, which we don't mind. We don’t have a big dining area or anything like that for guests to sit. It’s mostly just the kitchen where all the real work happens. We’ve got some big stoves, heavy pots, and a lot of prep tables covered in vegetables. Sometimes it gets really hot in here, especially in the middle of summer when the burners are all going. We’ve been in Inder Puri for a good bit of time now. We know the neighbors and the delivery guys who come by. It’s not a fancy restaurant with waiters in bow ties or soft music. We’re just back here making food for the orders. We have a lot of crates and big bags of flour stacked up in the corner. Sometimes the floor gets a bit slippery from all the washing up we have to do. We just keep our heads down and cook. People know where we are if they need something. It’s a practical setup that works for us. We don't spend money on big signs or anything fancy. If the food is good, people usually come back. That's how we see things. It’s just a regular kitchen doing its thing every day of the week.
