We are out here in Bhit Bherwan. It is a quiet place, mostly made up of farms and fields. At Ankur Jaggery Udyog, we spend our days making jaggery from the sugarcane grown right around here. The smell of the boiling juice is something you get used to after a while. It is sweet and thick in the air. We have the big pans going for most of the harvesting season. It is hot work, standing over the fires all day. My family has been doing this in this district for a long time. We do not have a big factory. It is more of a traditional setup. We wait for the cane to be harvested and then we get to work. The process is slow. You cannot rush it or the taste will not be right. We pour the hot liquid into the molds and wait for it to set. Once it is hard, we pack it up. Most of it goes to the nearby towns. People know the quality of what we make here. We do not do any advertising. Word of mouth is enough for us. Sometimes the power goes out, or the rain slows down the drying, but we manage. Life in the village moves at its own pace. We start when the sun comes up and we stop when the work is done. It is a simple life. We just focus on making good jaggery that people want to eat. There is not much more to it than that. We are just part of the local community here in Bhit Bherwan. My kids sometimes come and help with the packing when they are not in school.
