Our small unit is in Vermabad Gadi Village, which is part of the Nehtaur area. It is a quiet place most of the time, except when the crushing season starts. Then the whole village seems to wake up early to get the work done. We have a simple setup with the crusher and the boiling pans out in the open. The roads around here are mostly dirt, so everything gets a bit dusty when the wind picks up. We spend our days monitoring the heat of the furnace and making sure the cane juice is cleaning up properly. It is not a high-tech factory at all. We rely on what we see and feel to know when the jaggery is ready to be poured. Sometimes the weather doesn't cooperate and we have to cover everything up quickly if it starts to rain. We have a few local men who help with the heavy lifting and the feeding of the fire. It is an honest way to make a living and we have been doing it this way for years. We don't have a website or a sales team. The quality of the jaggery speaks for itself and people from the nearby towns come to buy what we make. It is just a routine of hard work, heat, and the sweet smell of the boiling juice every day.
