Premi Sweets

Being located in the Bhilwara Textile Market on Sanganer Road means we are right in the middle of all the chaos. Premi Sweets is a small shop but we stay busy because the market people always need something to eat. You see merchants and laborers walking past all day carrying rolls of cloth. We start early in the morning to get the milk boiling for the day’s batch of sweets. The smell of ghee is everywhere in the shop. We don’t have much space, so we have to be careful how we stack the trays in the display. During the festival seasons, it gets so crowded in here that you can barely move. We just try to keep up with the orders and make sure the frying is done right. The floor is made of old stone and we spend a lot of time washing it down because it gets sticky from the sugar syrup. We don't use any fancy machines, just big iron pans and wooden paddles. Sometimes we sit on the stools near the entrance when it's slow and just watch the trucks being loaded with textiles across the street. It’s a noisy and busy part of town, but we’ve been here long enough that it feels normal. We just serve the sweets on paper plates and keep the water cooler filled for the customers.
