Jay Joganiya Mishthan Bhandar

Jay Joganiya Mishthan Bhandar is located on Haled Road in the Bhawani Nagar area, which is near the Bhilwara Textile Market. Being near the market means we get a lot of workers and truck drivers coming in. We focus on making sweets like laddus and jalebis. The jalebi fryer is right at the front so people can see the steam. It’s a messy job, and my clothes usually have syrup spots on them by noon. We wake up early to get the first batches ready before the market opens up. The shop is pretty basic, with a few fans that don't do much against the heat of the kitchen. We have a lot of metal trays that we have to scrub every single evening. The floor is made of old stone and it’s seen a lot of wear over the years. We don't have a computer or any modern stuff; we just write things down in a notebook if we need to. It’s a lot of manual labor, stirring milk for hours to make mawa. We’ve been in Bhawani Nagar for a good while, and we know the rhythms of the street. When the textile market is busy, we’re busy. When it’s slow, we just sit and wait. It’s just a regular sweet shop. Sometimes we get tired of the smell of sugar, but most days it is just fine.
