Jayanagar is a quiet place compared to the rest of the city, and we like it that way. Our spot here is tucked away where the trees actually give some shade. We called it Tuscany but we aren't pretending we are in Italy. We just liked the way the name sounded. Mostly, we just bake things and make coffee. The oven is the heart of the whole place. If that thing breaks down, we are basically out of luck for the day. We spend a lot of time cleaning flour off the counters. It gets everywhere, even in your hair. We don't have a big philosophy or some deep meaning behind the food. It’s just about putting dough in the heat and hoping it rises right. Some days the bread is perfect, other days it’s a bit flatter than we’d like, but that’s just how baking goes. We don't use those pre-made mixes you find in big stores. We do it ourselves, even if it takes longer and our backs hurt. People come in to read books or just stare out the window at the Jayanagar streets. We don't rush them out. As long as there is space, they can stay. It’s a relaxed vibe, maybe a bit too slow for some, but it suits us just fine. We just keep the lights on and the water boiling, making sure there is always something fresh on the cooling rack.
