Taj Kitchen is tucked away in Frazer Town at Janapad Society 62. It’s a quiet enough area most of the time. We took over this space at number 62 because it had a good kitchen area. We didn’t change much when we moved in. The walls are still the same color and the floor is a bit worn from all the walking. We don’t have a big staff, just a few people who know how to cook. Frazer Town is a nice place to be, and Janapad Society has been good to us. We don’t do any big advertising. Most people who come here just live nearby or heard about us from a neighbor. We keep the pots moving and the stoves hot. Sometimes we run out of things or a delivery is late, but we just deal with it. It’s a real kitchen with real problems and real people. We don’t pretend to be anything more than what we are. The name Taj Kitchen sounded traditional and simple. We like that. Most of our day is spent prepping ingredients and cleaning up. It’s a lot of work, but it’s what we do. We aren't looking to expand or become a big brand. We just want to keep the kitchen at Janapad Society 62 running for as long as we can.
