Taj Darbar

We are located at 210 in HBR Layout. Taj Darbar is a family-run kind of place, and you can usually tell by how we talk to each other in the back. The kitchen stays hot all day long, especially when the big pots are on the stove. We’ve got a few fans going, but they mostly just move the warm air around. The walls are painted a simple cream color, though they’ve yellowed a bit near the cooking area. We don’t have a fancy interior designer; we just put up some calendars and a few clocks on the wall. One of the clocks is always five minutes fast, which helps us stay on schedule I guess. HBR Layout is a nice neighborhood because it’s not as chaotic as the city center, but it still gets plenty of foot traffic. We see a lot of people coming home from work who just want a quick meal without any fuss. The tables are covered with plastic sheets because it makes cleaning up spills much easier. We do all the grocery shopping ourselves early in the morning at the local market to make sure we have what we need. It’s a lot of heavy lifting and peeling vegetables. We don't have a big marketing plan or anything like that. We just open the shutters in the morning and wait for people to walk in. It’s a simple way to live, and we’re happy to be here at 210.
